Channa Pilau

Intro
Simple, fragrant and filling. I have been making this pilau recipe for years and it is loved by all when I make it.
We usually have this pilau with raita, curry or with tikkis and kebabs. There are lots of pilau recipes and I will be sharing more soon. But for now, here is the step by step recipe for my channa pilau.

What you need
- 3 cups of rice (I use a tea mug)
- 3 onions sliced
- 1/4 cup oil
- 5 cloves garlic crushes
- 1/2 inch ginger crushed
- 3 tomatoes
- 1 tbsp Kashmiri mild chilli powder
- 2 tsp salt
- 1 tbsp cumin seeds
- 1 stick of cinnamon
- 5 whole cloves
- 1/2 tsp whole black pepper
- 2 black cardamoms
- 3 chicken stock cubes
- 1 tin of chickpeas drained
- 4 cups of water (use the same mug you used to measure the rice with)
Getting it done

Step-1
Soak 3 cups of rice in cold water before starting you pilau.

Step-2
Thinly slice 3 onions.

Step-3
Add the sliced onions to 1/4 cup of oil in a pot and fry until golden brown.

Crush 5 colves of garlic and 1/2 inch of ginger until smooth.

Cut 3 tomatoes in half and remove the centre of the tomatoes.

Step-6
Add tomatoes and ginger garlic paste.

Add 1/4 cup of boiling water and cover and cook for 4-5 mins until tomatoes have softened.

Step-8
Remove the lid and the tomatoes will have softened. Remove the skin from the tomatoes.

Step-9
Now add spices.
1 tbs cumin seed
1 stick of cinnamon
2 black cardamoms
5 colves
1/2 tbs whole black pepper -
Step-10
Mix everything together and mash the tomatoes.

Crumble 3 chicken cubes and add to the pot

Add 1 tin of chickpeas.

Step-13
Now add
1 tbs of kashmiri chilli powder
2 tbs of salt
Mix and cook for 10 mins until everything is combined well and mashed. The color will be darken and oil will be seperate. -
Step-14
Add 4 cups of water (the same cup you used to measured the rice with) and bring to boil

Step-15
Wash and drain the rice that you soaked earlier. Add the rice to the pot. Bring to boil and cook until the water has dried but still a little is left in the pot

Step-16
Cover lid int the foil and place on the pot

Step-17
Place something heavy on the pot so the steam doesn't escape. Now cook the rice on low heat for 15-20 mins, Don't take the lid off during cooking.
Tips
- After 20 mins take the flat spoon and fulff up the rice by folding it over from underneath the pot.
- Serve with curry, raita, salad, kebabs, tandoori chicken. Anything. Its seriously tasty.
