These are really yummy and a great as a side dish or as a snack and the kids love them.

What you need

Getting it done

  • Step-1

    In a bowl add all the above ingredients, except the oil & fish, and add a small amount of water to make a thick batter.

  • Step-2

    Add the fish pieces to the batter and marinate for 1-2 hours.

  • Step-3

    In a large wok heat some oil. Test the oil is ready by dropping a little batter mix into it and it should fry nicely if the oil is hot enough.

  • Step-4

    Place the fish pieces one by one into the hot oil and fry for 4-5 mins turning occasionally.

  • Step-5

    Remove from oil once cooked and golden brown and drain on some tissue paper.

Ingredients:
500g mutton mince
2 large potatoes
1 large onions sliced
4 tomatoes
6 cloves garlic crushed
1 inch ginger crushed
1 tsp salt
2 tsp Kashmiri chilli powder
1 tsp turmeric powder
1 tsp cumin seeds
1 tsp garam masala
1 tsp coriander powder
1 tsp cumin powder
5 whole black pepper
4 whole cloves
1 black cardamom pods
1 cup of peas
Bunch of coriander
3 Green chillies (optional)
Oil for cooking

What you need to do:
1. In a pressure cooker add the mince, whole spices, onions, tomatoes, crushed garlic and ginger. Add 1/2 ltr of water and pressure cook for 25 mins after the whistle starts blowing on the pressure cooker.
2. Remove the lid and add the oil, chilli powder, salt, turmeric powder, coriander powder & cumin powder and fry on a high heat for 10-15 mins until the water has dried up and the mince has browned.
3. Whilst that is cooking away, peel, wash and cut the potatoes into small cubes, about 1 cm big.
4. Next add the potatoes and peas to the mince and mix well. Continue to cook on a medium heat for 4-5 mins until the potatoes are 1/2 cooked.
5. Add 1/2 cup of boiling water & the green chillies, mix & cover & cook until the potatoes are fully cooked.
7. Garnish with chopped coriander & garam masala.
 
Serve with hot chapatis/naan, mint chutney and onion salad.
 
Tips:
– If you don’t have a pressure cooker then you can cook meat in a pot but cooking time will be a little longer.
– Adjust the chilli & salt according to your taste.
– The peas & green chillies are optional.
- When using a pressure cooker, please ensure you follow manufacturers instructions

ALOO KEEMA MATTAR RECIPE | ONE POT MEAL | MAZADAAR

Shaami Kebab Recipe ⬇️

Here’s what you need;
1kg boneless beef/mutton
250g channa daal
2 medium onions
6 green chillies chopped 
2 tbsp garlic & ginger paste 
1 tbsp coriander powder
1 tbsp cumin powder
1/2 tbsp salt
1 stick cinnamon
6 whole cloves
2 black cardamoms
1 ltr water 
Chopped coriander 
1 tbsp garam masala
Oil for frying 
Whisked egg for dipping.
.
.
1. In a pressure cooker add the meat, onions, garlic & ginger paste, coriander powder, cumin powder, salt, whole spices, Channa daal & water. Pressure cook for 25 mins from when the whistle starts. 
2. Remove the pressure from the cooker and continue cooking on high heat until the water has dried up. 
3. Then either in a chopper or pestle & mortar grind the meat and daal together until a paste is formed.
4. Add the garam masala, coriander & green chillies to the meat and daal mixture and mix until everything is well combined. You can add more chillies/salt if your require. 
5. Apply a little oil to the palms of your hands and take a little mixture and roll into a ball and then flatten into a disc shape. Do this until all the mixture has been used.
6. Heat a pan with some oil and dip the shami kebab into the whisked egg and place into the hot oil and fry for 2-3 mins on each side and remove once golden brown.

Serve as a side with pilau/Biryani or in a burger, toasties, wraps, etc. 

Tips;
- I used a pestle & mortar to beat my kebab mix but you can use a choppedr. I just don’t like the texture a chopper gives the kebabs and prefer a more resha (shredded) texture. - if you don’t have a pressure cooker you can use a normal cooking pot but you’ll need to boil for longer and will need to check the water as it boils and add more if needed. - you can more or less chillies according to your taste.

This peri peri chicken steak with mash is just YUM!! 😋

This is enough for approx 3 chicken breasts
Peri peri marinade;
2 large red chilli
4 cloves garlic
Juice of 1 lemon
2 tsp white vinegar
1 tsp hot pepper sauce
2 tsp smoked paprika
1 tsp dried oregano
1tsp salt (adjust according to taste)
1/4 cup olive oil

Method: 
1. Slice the chicken breast through the middle lengthways 
2. Pour the marinade over the chicken breasts and leave to marinate overnight
3. Heat up a heavy pan and heat up some oil 
4. Place the chicken breasts on to the hot pan and cook for 3-4 mins
5. Turn over and cook the other side for 3-4 mins 
6. Keep turning over until fully cooked through. Use a skewer to test if the steak is cooked
7. Brush over some peri peri sauce before serving. 
Serve with sides of your choice.

Once it was cooled down I added some salad to the chicken and drizzled over some salad dressing and that’s it! Simple, quick & easy to make. Chicken Palak recipe ⬇️

Chicken and Palak - the perfect combination. I have been eating chicken palak from when I was a young child and it’s one of my favourite things to eat. 

It is a classic Pakistani dish cooked with chicken, spinach and with spices. It can be served as a main course or a side dish with rice or chapatis. It’s a really simple recipe but it’s important to cook each stage with patience to achieve the perfect flavours and ensure the spinach is cooked beautifully. 

What you need:
1kg chicken
600g chopped spinach
2 onions thinly sliced
6 tomatoes halved with cores removed 
6 cloves garlic crushed
1/2 inch ginger crushed
3-4 green chillies (optional)
1 tsp chilli powder
1 tsp coriander powder
1 tsp cumin seeds
1 tsp cumin powder
1/2 tsp turmeric powder
1 tsp salt - adjust accordingly 
Oil for cooking

Method:
1. Heat the oil in a pot & add the thinly sliced onions to it. Cook the onions for a few minutes until soft and light golden brown in colour. 
2. Add crushed garlic & ginger & sauté  for 1-2 mins.
3. Add the tomatoes, add approx 100ml boiling water & cover & cook for a few mins until the tomatoes have softened.
4. Remove the tomato skins & mash the tomatoes up. Continue cooking until the onions & tomatoes are soft.
5. Next add all the spices, salt & green chillies & cook for 5-6 mins adding splashes of hot water, to stop it from burning, until you have a nice thick gravy. 
6. Add the chicken to the mixture & cook for 10 mins until chicken is half cooked. You will again need to continue stirring & add splashes of hot water.
7. Add the chopped spinach, cover & cook for a few mins until the spinach starts to wilt.
8. Remove the lid & continue cooking for 10-15 mins over a medium flame, continuously stirring. 
9. Once the spinach has dried up & there is no water left from the spinach, the spinach has achieved a rich dark green colour, the chicken has fully cooked & the oil has separated, it’s ready to serve with roti or naan.

Tandoori chicken & potato tray bake recipe ⬇️

What you need
4 chicken legs 
5-6 baking potatoes 
1 tbsp tandoori powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp salt (adjust according to taste)
1 tsp garlic powder
1 tsp ginger powder
1 tsp chaat masala 
1/2 tbsp Kashmiri powder or 1 tsp chilli powder 
1/4 cup lemon juice
1/4 cup oil
1/2 cup plain yoghurt 
Coriander for garnishing 

Method:

1. Mix all the spices, salt, lemon juice, oil & yoghurt together
2. Add the chicken and potatoes to a deep roasting tray.
3. Pour over the marinade and mix until everything is coated in the marinade. Marinate overnight for best results. 
4. Cover the tray with foil. 
5. Bake in the oven for 1 hour on 200°
6. After an hour remove the foil and continue baking for 20 mins to crisp the chicken and potatoes up.

Serve with vegetables and a gravy.

Koftay is a popular curry dish throughout Pakistan. Tender meatballs cooked in a spicy, flavourful curry sauce. This dish is hearty and has the perfect balance of whole & ground spices. It’s best served with hot chapatis or naan bread. 

Ingredients:

Kofte/Meatballs:
1 kg mutton mince with 25% fat
1 large onion
4-5 green chillies 
Bunch of coriander
5-6 garlic cloves 
1/2 tbsp Kashmiri chilli powder
1/2 tbsp coriander powder
1/2 tbsp cumin powder
1 tsp salt
1 egg
1/2 cup gram flour/besan dry roasted in a pan 

Curry;
2 onions sliced
1 small stick cinnamon
1/2 tsp whole black pepper
1/2 tsp whole cloves
1 tsp cumin seeds
2 tbsp garlic & ginger paste
1 tbsp Kashmiri chilli powder
1/2 tbsp coriander powder
1/2 tbsp cumin powder
1/2 tbsp turmeric powder
1 tsp chaat masala 
1 tsp salt (adjust according to taste) 
3-4 tbsp plain yoghurt
1 tsp garam masala
Chopped coriander

Haven’t shared a post in a while. Miss the old Instagram where we shared photos instead of videos. I hosted a dinner this evening and the theme was Chinese/pan Asian food. 

On the menu was chicken gyozas/dumplings with a soy dipping sauce, vegetable spring rolls, egg fried rice, chicken sashlik & prawn crackers.
