Spicy Cous Cous

Intro
Spicy Cous Cous is a great alternative to rice & pasta. I cook this a lot, it’s quick and easy to make and the peri peri sauce is what makes this Cous Cous delicious!
It’s perfect served hot or cold with fish, salads, chicken, curries or stews.
This is also great for meal prep and you can store it in an airtight container in the fridge for up to 3 days.

What you need
- 300g Cous cous
- 3 spring onions finely chopped
- 1 bell pepper finely chopped
- 1/2 cup Turkish red pepper paste (biber salcasi)
- 1/4 cup tomato puree
- 600 ml of chicken stock or vegetable stock
- 3 tbs Nando’s peri peri sauce medium hot
- 3 tbs olive oil
- 1/2 tsp salt
Getting it done

Step-1
In a pot heat the olive oil.

Step-2
Add the chopped spring onion & pepper and sauté for 3-4 mins until slightly soft.

Add the cous cous, pepper paste, tomato puree, peri peri sauce and salt and mix well.

Pour in the stock & stir. Turn the flame to low, cover and cook for 15-20 minutes. Do not remove the lid during cooking.

Step-5
After 15-20 minutes remove the lid and using a fork fluff up the cous cous.
Tips
- It’s really that simple! The trick to cooking good Cous Cous is using the right ratio of water to Cous Cous. So the water or stock is always double the amount of Cous Cous. Also when cooking with the lid on don’t remove the lid as all the steam escapes.

Prepping your meals in advance doesn’t mean you have to eat the same boring meals everyday.
I plan what I’m cooking for the following week on a Friday and I’ll do the food shop on the Friday or Saturday. Then I’ll cook all the food for the week ahead on the Sunday. Things like salad, boiling rice I’ll do fresh before eating but most of the meals are ready.
